The invention relates to a composition comprising 5 to 100 wt.% of a structured aqueous phase wherein the composition contains 0.1 to 10 wt.% sericin by weight of water, said sericin having a proportion of beta-sheet in the secondary structure that exceeds 80%. It was found that sericin having a proportion of beta-sheet in the secondary structure that exceeds 80% is an excellent water structurant and can suitably be used to structure the aqueous phase of a wide range of products, such as cosmetic products, pharmaceutical products, food products and detergent compositions.La présente invention concerne une composition comprenant 5 à 100 % en poids d'une phase aqueuse structurée, la composition contenant de 0,1 à 10 % en poids de séricine en poids d'eau, ladite séricine ayant une proportion de feuillet bêta dans la structure secondaire qui dépasse 80 %. Il a été observé que la séricine ayant une proportion de feuillet bêta dans la structure secondaire qui dépasse 80 % est un excellent agent structurant d'eau et peut être utilisée de façon adaptée pour structurer la phase aqueuse d'une large gamme de produits, telle que des produits cosmétiques, des produits pharmaceutiques, des produits alimentaires et des compositions de détergent.
