The present invention refers to a process for extracting arabinogalactans fromcoffee beans comprising pre-treating the beans with water at 10 to 95~C forbetween two hours and one week and then enzymatically hydrolysing whole orground green or roasted coffee beans thereby obtaining an aqueous dispersioncomprising partially hydrolysed coffee beans and arabinogalactans.Furthermore, the invention also encompasses the use of coffee-derivedarabinogalactans products where the coffee derived arabinogalactans are usedsuch as a glassy matrix, pure soluble coffee and a beverage composition.
