PROCÉDÉ DE TRAITEMENT DE PRODUITS D'ORIGINE VÉGÉTALE DESTINÉ À ÊTRE UTILISÉ POUR EXTRAIRE DE LA PURÉE OU DU JUS, ET MACHINE POUR L'EXÉCUTION DE CE PROCÉDÉ
A method for treating a food product of vegetable origin, including the steps of pushing, by means of a pushing device, the food product within a treatment cavity. This is defined between an internal surface of a fixed hollow body, or stator, and an external surface having conical shape of a rotor, and has an inlet mouth through which the food product of vegetable origin is introduced within the same and an outlet mouth through which the treated vegetable food product exits the cavity. The treatment cavity has a size which decreases going from the inlet mouth to the outlet mouth. It is provided a rotation of the rotor within the stator about a rotation axis. The combination of the rotation and of the pushing that are carried out by the machines produce a partial crushing of the food product of vegetable origin within the treatment cavity.L'invention concerne un procédé de traitement d'un produit alimentaire d'origine végétale (100), en particulier un fruit, ce procédé comprenant comprend les étapes consistant à pousser, au moyen d'un dispositif de poussée, le produit alimentaire d'origine végétale dans une cavité de traitement. Cette cavité est définie entre une surface intérieure d'un corps creux fixe, ou stator (20), et une surface extérieure possédant la forme conique d'un rotor (30), et présente une ouverture d'entrée à travers laquelle le produit alimentaire d'origine végétale est introduit dans la cavité, et une ouverture de sortie à travers laquelle le produit alimentaire végétal traité sort de la cavité. En particulier, la cavité de traitement possède une dimension qui diminue de l'ouverture d'entrée à l'ouverture de sortie. En outre, il est prévu une rotation du rotor (30) à l'intérieur du stator (20) autour d'un axe de rotation (35). En particulier, la combinaison de la rotation et de la poussée qui sont exécutées par les machines produit un écrasement partiel du produit alimentaire d'origine végétale à l'intérieur de la cavité de traitement.
