- 本发明公开了一种卡门贝尔奶酪的制备方法,属于乳制品加工领域。本发明方法以生乳为原料,经巴氏杀菌后冷却,加入发酵剂和霉菌发酵剂,加入植物乳杆菌CGMCC No.10342附属发酵剂,搅拌均匀,预酸化一段时间,然后加入凝乳酶进行凝乳,待凝乳完成后,进行切割、排乳、入模、盐渍、成熟等操作,即得到卡门贝尔奶酪。按本发明方法得到的卡门贝尔奶酪,气味和滋味都得到改善。
