A delicious candy which is free from characteristic bitterness, has no fear of causing diarrhea, and produces a remarkable cooling feeling attributable to xylitol and a process for easily and industrially continuously producing such delicious candy. The candy (1) comprises known candy parts (3) and, sandwiched therebetween, a xylitol crystal part (2) which has undergone controlled crystallization and comprises a mixture of xylitol as the main component with a crystallization-controlling substance comprising at least one member selected among monosaccharides, disaccharides, and sugar alcohols obtained by reducing these and containing substantially no sorbitol.
