PROBLEM TO BE SOLVED: To provide a water-soluble, glycine-rich protein derived from fish, having no fishy smell and non-gelling property.SOLUTION: Provided is a protein derived from salmon nasal cartilage, which contains 30% or more of glycine (molar ratio in the total amino acids), 15% or more of hydroxyproline and proline together, and has a molecular mass of 10,000 or larger. This protein is obtained by treating salmon nasal cartilage with acetic acid to extract crude proteins, and then collecting the fraction permeated through ultrafiltration membrane of which molecular weight cut off is 100,000.
