The invention relates to the method of production of fermented, pro-healthy cereal beverages as replacers for fermented milks especially in nutrition of persons following the special elimination diets, particularly that requiring elimination of animal proteins and/or lactose, wherein in aqueous solution of 2-8% by weight of disaccharide not lactose, 0-6% by weight of monosaccharide and 0.05-0.25% by weight of sodium citrate a suspension 3-8% by weight is created of the cereal processed products, preferably flour, that is inoculated with Lactobacillus plantarum KKP 2025p strain or two-strain set of Lactobacillus plantarum KKP 2025p and Streptococcus thermophilus KKP 2030p cultures or with strain Lactobacillus bulgaricus s/l KKP 2007/p in quantity 0.001-0.01% by weight in case of each concentrated, lyophilized culture, leading the fermentation to pH not higher than 4.6, and then into the fermentation product, possibly a supplement is introduced in the form of concentrated lyophilized culture of Bifidobacterium breve KKP 2028p strain or Bifidobacterium infantis KKP 2029p strain in quantity 0.01-0.15% by weight.
