PROBLEM TO BE SOLVED: To provide a xanthohumol-containing extract, a method for producing the xanthohumol-containing extract, and applications of the extract.SOLUTION: The invention provides a roast extract containing xanthohumol (XN) acquirable from a roast extract and a hop extract. The roast extract contains the low-temperature extract or the high temperature extract of roasted cereal products, cereal malt, coffee, or cacao. The XN content in the extract is in the range of 10 mg/kg -2 g/kg of xanthohumol. The roast extract is used as pharmaceutical compositions and foods.【課題】キサントフモールを含む抽出物、キサントフモールを含む抽出物の製造方法、該抽出物の用途の提供。【解決手段】焙煎抽出物およびホップ抽出物から取得可能な、キサントフモール（ＸＮ）を含む焙煎抽出物。該焙煎抽出物は、焙煎した穀類製品、穀類モルト、コーヒーまたはカカオの低温抽出物もしくは高温抽出物を含む。前記抽出物中のＸＮ含有量は、キサントフモール１０ｍｇ／ｋｇ～２ｇ／ｋｇの範囲である。該焙煎抽出物は、医薬組成物、食品として用いられる。【選択図】なし
