PROBLEM TO BE SOLVED: To provide a method for producing an extract derived from rush having a unique aromatic odor of a fresh, new tatami-mat, to provide such an extract, and to provide a "brain function improvement agent utilizing an olfactory sense" that presents a preventive therapeutic effect for dementia or the like.SOLUTION: A method is for producing an extract having an aromatic odor of a tatami-mat. The method includes, after harvesting, dyeing rush with mud before dehydration, dehydrating the rush, crushing while agitating the dehydrated rush by an agitation blade, heating and decompressing the rush under the crush and agitation, and extracting and producing an extract. An extract is obtained by the method.
