PROBLEM TO BE SOLVED: To provide a production method of baked confectionery showing unprecedented new texture, which is baked confectionery comprising baked chocolate; and to provide the baked confectionery.SOLUTION: Alcohol or alcohol-containing aqueous solution is added to baked chocolate, sealed and packaged, to thereby obtain baked confectionery. Preferably, the baked confectionery comprises a product obtained by bonding a bottom chocolate dough and gas-containing chocolate dough so that the bottom chocolate dough forms a bottom surface, and by baking it.
