Disclosed are a high-dispersion plant protein and method for preparation thereof. The method for preparation comprises the following steps: mixing plant protein with 5-19 times its weight of water adding glutaminase and a protease enzyme, then adjusting the pH value of the solution to 7.0-8.0 warming for 0.5-24 h at 20-55 °C, then warming for 5-30 min at 70-95 °C for enzyme inactivation and spray drying to obtain a high-dispersion plant protein.Linvention concerne une protéine végétale à dispersion élevée et son procédé de préparation. Le procédé de préparation comprend les étapes suivantes consistant à : mélanger une protéine végétale avec 5 à 19 fois son poids deau ajouter de la glutaminase et une enzyme protéase, puis ajuster la valeur de pH de la solution entre 7,0 et 8,0 chauffer pendant 0,5 à 24 h entre 20 et 55 °C, puis chauffer pendant 5 à 30 min entre 70 et 95 °C pour linactivation enzymatique et sécher par atomisation pour obtenir une protéine végétale à dispersion élevée.
