PROBLEM TO BE SOLVED: To provide a method which allows a raw material meat lump to be rapidly impregnated with a pickling liquid.SOLUTION: Prior to injection of a pickling liquid into a raw material meat lump B, a pretreatment step is performed with a raw material meat lump processing unit. The raw material meat lump processing unit includes a loading part 1 for the raw material meat lump B and a vertically movable gas injection head 3 opposite to the loading part 1. The gas injection head 3 includes a gas injection needle 19 to be stung into the raw material meat lump B loaded on the loading part 1.
