The present invention relates to a device for safely sterilizing food. In a process of preheating/sterilizing/cooling food, a dual pipe or a triple pipe is applied, so heat exchange efficiency can be improved. Thus, the number of pipes is minimized, and an installation area is reduced. Also, a food residual amount in a pipe can be minimized. Through an operation fluid pressure maintaining unit and a food pressure maintaining unit, food and an operation fluid passing through the double pipe or the triple pipe are adjusted to have a predetermined pressure difference therebetween. Even when a pinhole in a pipe is generated according to an accident or a facility deterioration in a food sterilizing process, the occurrence of contamination is prevented by preventing the operation fluid from being inserted into the food. After the food is sterilized, multi-pipes in the heat exchange unit and the inside of the food transferring pipe are periodically washed through a pipe washing unit. Thus, the inside of the pipe can be cleanly maintained.
