The present invention relates to a purple carrot juice extractor and an extracting method thereof and, more specifically, to a purple carrot juice extractor which comprises: a washer which washes collected purple carrots a crusher which crushes the purple carrots washed by the washer a juice extractor which extracts juice from the purple carrots crushed by the crusher a vibrating separator which vibrates and separates the juice extracted by the juice extractor by a vibrating screen a filter which filters the juice separated in the vibrating separator by vibration a cooling tank which stores the juice filtered by the filter a sterilizer which sterilizes the juice stored in the cooling tank and a packing machine which fills and packs package with the juice sterilized by the sterilizer. The sterilizer is a double tube structure consisting of an inner tube and an outer tube, wherein juice passes through the inner tube, hot water passes between the outer tube and the inner tube, and protrusions of a spiral shape protrude successively from the outer surface of the outer tube.
