The present invention provides a method for preparing additive-free fermented milk by using only raw milk and lactic acid bacteria and additive-free fermented milk prepared thereby. The method of the present invention comprise the steps of: (a) cooling raw milk whose impurities are removed to prepare fresh milk; (b) pre-heating and homogenizing the fresh milk prepared in the step (a) to prepare homogenized milk; (c) sterilizing and cooling the homogenized milk prepared in the step (b) to prepare sterilized and cooled milk; (d) adding lactic acid bacteria to the sterilized and cooled milk prepared in the step (c) to ferment the milk; and (e) cooling and filtering the fermented product prepared in the step (d).본 발명은 (a) 진애물이 제거된 원유를 냉각시켜 생우유를 제조하는 단계; (b) 상기 (a) 단계의 제조된 생우유를 예열 및 균질화하여 균질유를 제조하는 단계; (c) 상기 (b) 단계의 제조된 균질유를 살균 및 냉각하여 살균·냉각유를 제조하는 단계; (d) 상기 (c) 단계의 제조된 살균·냉각유에 유산균을 첨가하여 발효하는 하는 단계; 및 (e) 상기 (d) 단계의 발효물을 냉각 및 여과하는 단계를 포함하여 제조하는 원유와 유산균만을 이용한 무첨가 발효유의 제조방법 및 상기 방법에 의해 제조된 무첨가 발효유를 제공한다.
