The invention relates to the process of preparing Whey based ready to serve (RTS) beverage from fruit extract. The whey required for developing RTS beverage was prepared by adding 0.5% citric acid with continuous stirring in a hot milk. The prepared whey is filtered through muslin cloth. The fruits (Grape, Watermelon, Pineapple, and Strawberry) were washed and peeled. The pulping was done by using mixed and peeled in a water bath. The juice formed was collected by pressing the pulp through muslin cloth. The fruit juice kept for refrigeration at 7±1°C. The beverage was prepared by blending Whey, fruit juice and sugar with fixed ratio. Whey based RTS beverage is having good palatability, acceptability and nutritive value.
