The invention relates to the process of preparing Whey based ready to serve (RTS) beverage from fruit extract. The whey required for developing RTS beverage was prepared by adding 0.5% citric acid with continuous stirring in a hot milk. The prepared whey is filtered through muslin cloth. The fruits (Papaya, Muskmelon and Kiwi) were washed and peeled. The pulping was done by using mixed and peeled in a water bath. The juice formed was collected by pressing the pulp through muslin cloth. The fruit juice kept for refrigeration at 7±1°C. The beverage was prepared by blending Whey, fruit juice and sugar with fixed ratio. Whey based RTS beverage is having good palatability, acceptability and nutritive value.
