PROBLEM TO BE SOLVED: To provide a method for processing young leaves of rice or various kinds of wheat/barley so as not to impair the nutrients inherent therein and thereby to ensure the nutrients to be efficiently taken as supplements or foods. SOLUTION: This method for processing young leaves so as to inhibit the destruction, or the like, of the active ingredients inherent therein comprises the following steps: washing step (step n3) for washing reaped young leaves, preliminarily drying step (step n6) for drying thus washed young leaves, and far-infrared drying step (step n8) wherein the thus preliminarily dried young leaves is subjected to far-infrared rays in a medium-temperature ambience and dried until a specified moisture content thereof is attained.
