Disclosed is a method of producing charcoal using tomato. Specifically, disclosed are a method of producing charcoal using tomato which is known among vegetables for its antioxidant activity, anti-aging activity, and skin regenerative effect for the skin and a method of producing cosmetic water having alleviated skin irritability and improved use sensation by using the same. According to the present invention, tomatoes are heated at a predetermined temperature to extract tomato liquid, and are secondarily heated at a higher temperature to form first tomato charcoal, which is then subjected to steam and dried to form second tomato charcoal. According to the present invention, material produced by using water purified from having passed through the liquid and charcoal or the charcoal, and further having characteristic fragrance of the tomato permeated into the water, can be used as a cosmetic material or a cosmetic water.
