It can be difficult to maintain adequate probiotic viability when incorporating probiotics into nutritional supplements or foodstuffs. Preferred embodiments of the present invention seek to provide a protective matrix which may be used to enhance the viability of a probiotic distributed within it. In particular, the present invention relates to microparticles comprising a protective matrix and a protective matrix precursor composition comprising a blend of a denatured protein, a polyol plasticizer, trehalose and a carrier. The present invention provides a microparticle precursor composition comprising a blend of a probiotic, a cross-linkable reagent, a denatured protein, a polyol plasticizer, trehalose and a carrier. The present invention also provides a method of producing the microparticle precursor composition, a method of producing microparticles using the microparticle precursor composition, and microparticles produced using the microparticle precursor composition.
