PROBLEM TO BE SOLVED: To provide a device and method for processing head-forming vegetables in which the liquid exuding from milk ducts is stopped in cutting parts just after cutting stems without increasing a cycle time of work when the head-forming vegetables such as lettuces being planted in fields are harvested, and thereby the occurrence of browning in the cutting parts can be prevented.SOLUTION: A device 1 for processing head-forming vegetables concerning the present invention is provided for performing the processing to stop the liquid exuding from milk ducts in the cutting parts just after cutting the stems of the head-forming vegetables.
