The present invention relates to a process for obtainment of amino acid chelates with essential micro-elements, which are intended to be used as feed or food additive, dietary supplement for humans or fertilizers with micro-nutrients for plants. Process include the following stages: washing of the proteinaceous material for removal of a large parts of compounds responsible for bitterness and for partial destruction of quaternary and tertiary structure of proteins; dispersion of the proteinaceous material on water and addition of a microbial lipase on a highly dispersed media resulted from ultrasonication of the mixture, for the formation of the compounds which increase the palatability of products and for a better exposure of peptidic bonds; hydrolysis of proteinaceous material with a mixture of microbial proteases, centrifugation of the eventually parts of non-reacted material; ultrafiltration of the resulting hydrolysate; concentration by evaporation on a reduced pressure of the permeate till 15% dry matter; addition of an insoluble salt of essential micro-element and reaction for chelation on a highly dispersed media, followed by centrifugation of the excess insoluble compound of micro-element and spray-drying of the supernatant.
