PROBLEM TO BE SOLVED: To provide a method of producing ceramide, and a ceramide derivative capable of easily separating ceramide, and a ceramide derivative from an extract extracted with an organic solvent from a fish meat.SOLUTION: A mixture 6 is obtained by the steps of: stirring a fish meat 1 in a first mixed solvent 2 to extract ceramide and a ceramide derivative into the mixed solvent 2 filtering the mixed solvent 2 to obtain a filtrate and drying the filtrate 5 by vacuum distillation. A ceramide 15 is obtained from an organic phase 13, and ceramide derivative 16 is obtained from an aqueous phase 14 by adding a second mixed solvent 11 to the mixture 6, stirring, and thereafter standing still to separate into the organic phase 13 and the aqueous phase 14.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2017,JPO&INPIT【課題】魚肉から有機溶媒により抽出される抽出物から、セラミドとセラミド誘導体とを容易に分離することができるセラミドとセラミド誘導体との製造方法を提供する。【解決手段】魚肉1を第1の混合溶媒2中で撹拌し、セラミドとセラミド誘導体とを混合溶媒2中に抽出し、混合溶媒2を濾過して得られた濾液5を減圧蒸留により乾固して混合物6を得て、混合物6に第2の混合溶媒11を加え、撹拌した後、静置することにより、有機相13と水相14とに分離し、有機相13からセラミド15を得る一方、水相14からセラミド誘導体16を得る。【選択図】 図1
