PROBLEM TO BE SOLVED: To provide a harvest device and a harvest method capable of easily and efficiently cutting and harvesting leaf vegetables raised in a tray without using air blow as a cutting auxiliary mechanism.SOLUTION: The harvest device harvests foliage by cutting plural leaf vegetables raised in a tray and includes: an arrangement part arranging a tray holding means holding foliage of leaf vegetables in the tray arranged in the arrangement part and a cutting blade cutting the leaf vegetables in a state of the foliage held by the holding means.
