The present invention relates to a method for producing a ginseng extract with increased content of acidic polysaccharide and ginsenoside, which comprises the following steps: (a) cutting roasted ginseng to prepare cut ginseng (b) drying and bulking the cut ginseng cut in the step (a) (c) mixing powder, made by grinding the cut ginseng bulked in the step (b), with ethanol and performing an extraction operation and (d) putting the extract, extracted in the step (c), into a subcritical extractor and performing an extraction operation. The present invention also relates to a ginseng extract with increased content of the acidic polysaccharide and the ginsenoside produced by the same method, and to processed food produced by using the ginseng extract.
