Disclosed is a process for producing a cholesterol concentrate including the steps of (a) distilling a fish oil having no more than 2% free fatty acids in an admixture with an auxiliary fluid in a vacuum distillation column to obtain a first distillate and a first residue； and (b) distilling the first distillate in a vacuum distillation column to obtain a second distillate and a second residue, wherein the second residue includes the cholesterol concentrate.L'invention concerne un procédé de production d'un concentré de cholestérol comprenant les étapes consistant à (a) distiller une huile de poisson contenant une proportion inférieure ou égale à 2 % d'acides gras libres dans un mélange comprenant un fluide auxiliaire dans une colonne de distillation sous vide pour obtenir un premier distillat et un premier résidu ； et à (b) distiller le premier distillat dans une colonne de distillation sous vide pour obtenir un second distillat et un second résidu, le second résidu comprenant le concentré de cholestérol.
