A protein-free solute foaming composition is provided which containscarbohydrate particles having a plurality of voids containing entrappedpressurized gas. The composition may include a surfactant and may be containedin a food product such as a beverage mix or an instant food. In addition, amethod is provided for manufacturing the foaming composition in which theprotein-free soluble foaming particles are heated and an external pressureexceeding atmospheric pressure is applied to the protein-free soluble foamingparticles. The soluble foaming particles are cooled and the external gaspressure is released resulting in pressurized gas remaining in internal voidsof the foaming composition.
