Die Erfindung betrifft ein Verfahren zum Herstellen eines Aromastoffkonzentrats. Das Verfahren umfasst zumindest die Schritte a) Bereitstellen eines Fluids, welches wenigstens einen Aromastoff umfasst und mittels einer Entalkoholisierungsvorrichtung (14) aus einem Ethanol-haltigen Lebensmittel erhalten ist, b) Bereitstellen wenigstens eines Sorptionsmittels, c) Beaufschlagen des wenigstens einen Sorptionsmittels mit dem Fluid, wobei zumindest ein Teil des wenigstens einen im Fluid enthaltenen Aromastoffs am Sorptionsmittel adsorbiert, d) Bereitstellen wenigstens eines Desorptionsmittels und e) Desorbieren zumindest eines Teils des wenigstens einen am Sorptionsmittel adsorbierten Aromastoffs durch Beaufschlagen des Sorptionsmittels mit dem wenigstens einen Desorptionsmittel unter Gewinnung eines Aromastoffkonzentrats, in welchem eine Konzentration des wenigstens einen Aromastoffs gegenüber seiner Konzentration im Fluid erhöht ist. Die Erfindung betrifft weiterhin eine Vorrichtung (10) zum Durchführen eines solchen Verfahrens.The invention relates to a method for producing a flavor concentrate.
