PROBLEM TO BE SOLVED: To provide an infiltration inhibitor for food, high in the effect of preventing food from infiltration attributable to syneresis, needing no heating step, giving good palate feeling, and capable of giving food shiny gloss, and to provide a viscous food and an infiltrative food.
SOLUTION: The infiltration inhibitor for food contains &lambda-carrageenan, xanthan gum, guar gum and tamarind seed gum in the compounding ratio of 100:17:10:10, wherein the &lambda-carrageenan, xanthan gum, guar gum and tamarind seed gum are dispersed by a dispersant with glucose, maltodextrin and a dextrin compounded together in the ratio of 3:5:5.
