CANDY CONTAINING CARBON DIOXIDE GAS WHERE MOISTURE PERMEATION IS PREVENTED BY COATING LAYER CONTAINING POWDER OF VEGETABLES OR FREEZE DRYING FRUIT, AND METHOD FOR MANUFACTURING THEREOF
The present invention relates to a candy containing carbon dioxide gas, in which moisture permeation is prevented by a coating layer with freeze-dried fruit or vegetable powder having outstanding effects of preventing moisture permeation, and a manufacturing method thereof. In the present invention, the candy can maintain carbon dioxide gas by preventing moisture permeation even though the candy is mixed with a liquid raw material in a manufacturing process, before a cooling process like ice creams and an internal coating layer which is an oil layer and an external layer prevent moisture permeation by a permeation preventing layer, preventing moisture permeation in two stages. The manufacturing method of the candy containing carbon dioxide gas, in which moisture permeation is prevented comprises the steps of (a) forming an oil coating layer, which is an internal coating layer and can prevent moisture permeation by coating the surface of the candy containing carbon dioxide gas with oil； (b) forming a flake coating layer by coating the oil coating layer with flakes having freeze dried fruit or vegetable powder； (c) selecting candy containing carbon dioxide gas, with the oil coating layer and the flake coating layer by using a mesh net； (d) and forming a permeation preventing layer, which is an external layer and can prevent moisture permeation by coating the flake coating layer of the selected candy containing carbon dioxide gas.본 발명은 아이스크림과 같이 냉각 전 제조공정에서 액체상태의 원료와 혼합하더라도 캔디 내부로 수분의 침투가 방지되어 내부의 이산화탄소 기체가 빠져나가지 않으며, 내부 코팅층인 오일 코팅층과 외부 코팅층은 투습 방지층에 의해 수분의 침투가 2단계로 방지되어 수분침투 방지효과가 뛰어난 동결건조 과일분말 또는 야채분말이 함유된 코팅층에 의해 수분침투가 방지되는 이산화탄소 기체 함유 캔디 및 그의 제조방법에 관한 것이다. 이를 위한 본 발명의수분침투가 방지되는 이산화탄소 기체 함유 캔디의 제조방법, (a) 이산화탄소 기체 함유 캔디 표면에 오일을 코팅하여 수분침투를 방지하기 위한 내부 코팅층인 오일 코팅층을 형성하는 단계； (b) 상기 오일 코팅층 위에 동결건조 과일분말 또는 야채분말을 포함하는 프레이크를 코팅하여 프레이크 코팅층을 형성하는 단계； (c) 상기 오일 코팅층 및 프레이크 코팅층이 형성된 이산화탄소 기체 함유 캔디를 메쉬체로 크기를 선별하는 단계； 및 (d) 상기 크기가 선별된 이산화탄소 기체 함유 캔디의 프레이크 코팅층 위에 투습방지제를 코팅하여 수분침투를
