FIELD: food industry.SUBSTANCE: invention relates to the food industry, specifically to the production of marinated small-piece semi-finished meat products from the meat of domesticated reindeer. Marinated semi-finished product contains venison, 6 % apple vinegar, dried juniper berries, onion. Onion is pre-cleaned and cut into half rings. Meat is cut into pieces in the form of slivers with length of 3–4 cm, thickness of 1 cm and weighing 10–15 g, 6 % apple vinegar is then poured, followed by adding onions cut into half rings, dried juniper berries, mixing and standing for 12 hours at a temperature of +4 °C.
