PROBLEM TO BE SOLVED: To provide a powdery oil and fat for confectionery and bread making, allowing a heat treated food containing the oil and fat as a raw material to have a crispy texture readily meltable in the mouth.SOLUTION: The powdery oil and fat contains at least one selected from the group consisting of an oil and fat with a solid fat content at 20°C of 8 to 30%, and a trans fatty acid content of 5 mass% or less relative to the total amount of the oil and fat, a sorbitan fatty acid ester to raise the solidification starting temperature of palm oil by 1.0°C or higher, and a polyglycerol fatty acid ester to raise the solidification starting temperature of palm oil by 1.0°C or higher.SELECTED DRAWING: None
