The present invention relates to a preparation method of a squeezing type edible jelly composition containing purified fish oil which comprises the following steps: mixing and homogenizing 20-200 parts by weight of non-ionic surfactant and 20-200 parts by weight of purified water, and adding 100 parts by weight of purified fish oil into the mixture to obtain purified fish oil hydrated liquid; mixing and dissolving 5-30 wt% of purified fish oil hydrated liquid, 0.5-5 wt% of gum, 65-80 wt% of purified oil, and the proper amount of a flavoring agent, a sweetener, and a pigment; and concentrating and sterilizing the mixture to obtain jelly.본 발명은 ⅰ) 비이온성 계면활성제 20∼200 중량부, 정제수 20∼200 중량부를 혼합 균질화시킨 후 정제어유 100 중량부를 첨가하여 정제어유 수화액을 제조하는 단계; 및 ⅱ) 상기 정제어유 수화액 5∼30 중량%, 검류 0.5∼5 중량%, 정제수 65∼80 중량% 및 적량의 향료, 감미료, 색소 등을 혼합 용해시킨 후 농축, 살균시켜 젤리를 제조하는 단계;로 이루어진 정제어유 함유 짜먹는 젤리 조성물의 제조방법을 제공하는 것이다.
