Provided is an apparatus for fermenting roasted coffee beans including a cooling unit (30) which cools roasted coffee beans using cool air before beans are supplied to a coffee machine (15) through a beans feeding pipe (10) by compressed air from a roasting tank (12), wherein the cooling unit (30) includes a fermenting pipe (32) configured to ferment the roasted coffee beans supplied from the roasting tank (12), and a plurality of spraying nozzles (34) formed in a spiral direction from an inlet to an outlet at regular intervals with respect to a periphery of the fermenting pipe (32) so that the roasted coffee beans can be rapidly cooled by vortex generated by spaying compressed air to the inside the fermenting pipe (32) therethrough and discharged to the outside of the fermenting pipe (32) simultaneously, wherein the roasted coffee beans can be rapidly cooled in a short time by being swirled by a strong vortex along the length of the fermenting pipe (32) thereby reducing the loss of coffee flavor thus people can enjoy deep flavor and taste of the coffee.
