PROBLEM TO BE SOLVED: To provide a high-purity chlorogenic acid composition having stability and being reduced in caffeine content by recovering chlorogenic acids selectively and efficiently from a coffee beans extract with a simple method.
SOLUTION: The coffee beans extract is so adjusted as to have a pH of 0.5 to 4.0, and then is subjected to solid/liquid separation. The resultant liquid is adsorbed by an adsorbent and then eluted into an alkaline aqueous solution.
