The method of production of hard microcapsules is the subject of the notification, whereby components of a suspension consisting of a aqueous and hydrophobic phase are introduced into a working tank equipped with a circulating pump and a mixture. In the preparation of the two-stage liquid system in emulsified form into the aqueous phase, dissolved sugars in the form of a lactose concentration of 3%,trehalosis in concentration 6%,maltodextrine in the concentration of 10% and protein in the form of whey proteins, skimmed-milk powder in the concentration 6%. Rape oil at 8% and palm fat in solid form, at 10% concentration shall be used in the fatty process,the dry matter content of the suspension is 30%. The mixture is subjected to intense mixing until a homogeneous combination of constituents. After mixing the constituents, the mixture is fed to the homogeniser, where the pressure homogenisation process is carried out. The homogenisation process shall be assisted by a high-energy ultrasound emitter with a frequency of more than 100 kHz. The homogenisation process shall be carried out three times. Delivery Emulsionsee the buffer from which it is transported by means of a pump to a drying system containing a spray tower with a spray nozzle equipped with a spray nozzle powered by compressed air and an ultrasonic micronisation systemwhere the drying and capsule production process is carried out. The temperature at the inlet to the drying system shall be kept within the limit of 180 degrees Celsius, while the temperature at the outlet of the drying system shall be kept within the limit of 80 degrees Celsius, after which the product obtained by drying, the particles of which have regular shapes and dimensions between 20 to 80 micrometers, is subjected to a drying process at a temperature of 45 degrees Celsius until the moisture is less than 5%.
