PROBLEM TO BE SOLVED: To provide a method of equally extracting a large amount of essence in simple and rapid manner, into a large amount of water at normal temperature, with little change of properties of the essence, from a large amount of an essence-containing material such as tea, under the conditions of normal temperature (cold temperature) without the need to heat, as well as an extraction device.SOLUTION: The method of extracting an essence contained in the material includes the following procedures. An accommodating netted container 9 for an essence-containing material and a rapid on-off valve 7 are interposed in a cold temperature/normal pressure circulating water enclosed paths 1 and 1. Then, an positive and negative water impact is inflicted to the circulating water by the repeated rapid on-off operation of the valve 7.
