PROBLEM TO BE SOLVED: To provide new stevia sweetening components with which a quality control of sweeteners is made easy and a raw material of the sweetener, including Rebaudioside A as a main component, can be identified through analysis of components of the new steviol glycosides, a stevia extract and crystals including them, and correctness of indication of origin or infringement of right of stevia varieties can be easily determined.SOLUTION: Provided are new steviol glycosides which are included in stevia varieties and extracted from Stevia Rebaudiana Bertoni, and which include Rebaudioside A as a main component. The glycosides includes ten components which may impart a subtle influence on taste quality. There are differences in contents of these components among varieties, and it is possible to use them as markers of stevia varieties. Also provided is a production method of foodstuffs, where the extract or high-purity Rebaudioside A obtained by purifying the extract is added thereto in an amount of 1% or less.【課題】新規ステビオール配糖体成分とそれらを含むステビア抽出物、結晶品の成分分析により、甘味料の品質管理を容易にすると共にレバウディオサイドAを主成分とする甘味料の原料を特定でき、ステビア品種の産地表示の適切性や権利侵害の判断が容易とする新たなステビア甘味料成分の提供。【解決手段】ステビア、レバウディアナ、ベルトニーからの抽出物でありレバウディオサイドAを主成分とするステビア品種に含まれる新規ステビオール配糖体であり、味質に微妙な影響を与え得る、新規ステビオール配糖体10成分を特定。それら成分が品種間で含有量に差があり、ステビア品種のマーカーとして利用しうる。前記抽出物を1%以下添加するか、又は前記抽出物から精製した高純度レバウディオサイドAを1%以下添加する食品の製造方法。【選択図】なし
