PROBLEM TO BE SOLVED: To provide an albumen pneumatic foam composition excellent in foamability (easiness of foaming and foam condition), foaming stability (temporal stability of foam) and workability, and to provide confectionery excellent in floating (swelling condition) and having peculiar palate feeling and melting feeling in the mouth.

SOLUTION: This albumen pneumatic foam composition includes albumen and yolk, and satisfies (a) and (b) conditions as follows: (a) An albumen content in the albumen pneumatic foam composition is 26-87 mass%, and (b) A mass ratio of albumen and yolk is that albumen/yolk=(1:0.05)-(1:0.25).
