PROBLEM TO BE SOLVED: To provide a seafood anesthetization method hardly deteriorating the quality of seafood although using a compact and simple device, capable of anesthetizing for a short time period, and capable of maintaining the anesthetization stably for a prolonged period.SOLUTION: An anesthetization method according to the invention comprises: an anesthetization step of dissolving carbon dioxide of a predetermined quantity necessary for anesthetization of a seafood in water and an oxygen super-saturation step of keeping the oxygen dissolved in water in a super-saturation state.
