To provide a method for producing a dried fruit which can be produced easily and further can produce a dried fruit having better texture and taste while maintaining good appearance.A method for producing dried fruits includes a freezing step of freezing fruits (11) at a temperature at which free water in fruits (11) is frozen and at least a part of bound water is not frozen, and a boiling point of water of 50 C. or higher and 70 C. And a drying step of applying an electromagnetic wave under the condition of evaporating water without boiling to the frozen fruit 11 under a reduced pressure environment which is below the evaporating the moisture.BACKGROUND OF THE INVENTION【課題】簡便に製造でき、さらに、外観を良好に保ちつつ、食感や味のより優れた乾燥果実を製造することができる乾燥果実の製造方法を提供する。【解決手段】乾燥果実の製造方法は、果実11中の自由水が凍結し、結合水の少なくとも一部が凍結しない温度で果実11を冷凍する冷凍工程と、水の沸点が50℃以上70℃以下になる減圧環境下で、冷凍してある前記果実11に、水を沸騰させずに蒸発させる条件の電磁波を印加して水分を蒸発させる乾燥工程とを備えるものである。【選択図】図1
