PROBLEM TO BE SOLVED: To provide a flour paste which can be transported, stored and used in a wide temperature range and for a long period of time without requiring separate use of a raw material oil and fat by the storage temperature at low cost.SOLUTION: There is provided a flour paste which is obtained using a palm-based oil and fat as a main raw material and contains, in the entire flour paste, 8 to 45 wt.% of a liquid oil and fat derived from palm oil containing 10 to 30 wt.% of glycerides in which the SU2/UUU weight ratio is 1.9 or less, the SSS content is 2 wt.% or less and palmitic acid is linked at the position 2 in the total liquid oil and fat.COPYRIGHT: (C)2015,JPO&INPIT【課題】幅広い温度域且つ長期間の輸送、保存、使用が可能であり、保存温度による原料油脂の使い分けが不要なフラワーペーストを安価に提供する。【解決手段】パーム系油脂を主原料とし、SU2/UUU重量比が1.9以下且つSSS含量が2重量%以下であり、2位にパルミチン酸が結合したグリセライドを液状油脂全体中10~30重量%含有するパーム油由来液状油脂を、フラワーペースト全体中8~45重量%含有するフラワーペースト。【選択図】なし
