PROBLEM TO BE SOLVED: To provide a method for producing a boiled rice food improved in physical properties and taste, and to provide an enzyme preparation for modifying the boiled rice food.SOLUTION: This method for producing the boiled rice food comprises using enzyme which has sugar converting activity converting &alpha-1,4 bond into &alpha-1,6 bond, and transglutaminase.
