PROBLEM TO BE SOLVED: To provide a device for accelerating maturation, fermentation, and thawing by heating dipoles of food material with electrostatic induction due to electromagnetic field vibration caused by long waves (radiowaves), while a proper heating for maturation, fermentation, and thawing is difficult without adjustment of frequency in electrostatic induction between electrodes with enhanced potential in a DC or AC electrostatic field, and microwave thawing has a problem of excessive heating.SOLUTION: The device for accelerating maturation, fermentation, and thawing includes U-shaped metal plates as a capacitor having U-shaped metal plates (capacitor) 1 and 2, and a gap 5 through an insulator 3. A vibration current is fed to the U-shaped metal plates (capacitor), so that long waves (radiowaves) are emitted from the gap toward a space. A food material is exposed to the electromagnetic field vibration caused by the long waves. Consequently electrostatic induction is caused in the food material, so that the alteration in polarity of dipoles generates kinetic energy, which is converted to frictional heat.
