Provided are: a powder emulsifying agent composition which has improved dispersibility and is capable of providing food with excellent texture and a production method by which this powder emulsifying agent composition can be obtained easily. An emulsifying agent composition that contains (A) a saccharide, (B) a glycerol fatty acid monoester and (C) a lecithin, in which the phospholipid content is 90% by mass or more and the total content of phosphatidic acid and a hydrogenated product thereof is 5-30% by mass, is used. This emulsifying agent composition is obtained by spray drying an aqueous dispersion that contains the components (A)-(C).本發明使用一種乳化劑組成物,其含有(A)醣類、(B)甘油脂肪酸單酯及(C)卵磷脂,該卵磷脂中,磷脂質之含量為90質量%以上,且磷脂酸和其氫化物之合計含量為5質量%至30質量%。藉由將含有成分(A)至成分(C)的水分散液噴霧乾燥,會容易地得到此乳化劑組成物,且藉由使用此乳化劑組成物,分散性更加提昇,能得到口感優良之食品。
