PROBLEM TO BE SOLVED: To provide a method for producing a food additive material which can surely give wine flavor to bread, is usable for various applications, and can add not only wine flavor but also wine color to food to be added therewith.
SOLUTION: This method for producing the food additive material comprises (a) a process of adding to residue after squeezing wine, water of an amount almost equal to that of the residue followed by boiling for about 30 min-1 h while adding water to retain moisture, (b) a process of mixing the residue together with boiling water followed by straining using a mesh of about 2 mm mesh, and (c) a process of adding a necessary amount of wine yeast to 100 pts.wt. of the paste thus obtained, and fermenting the product for about 7-10 days at about 20-25°C.
