The present invention relates to a method for preparing dried vegetables for home meal replacement and dried food materials manufactured therefrom. The method comprises the following steps: (A) applying seasonings on the surface of vegetables (B) heating and steaming the vegetables applied with the seasonings with super-heated steam so that the center temperature of the vegetables is to be 60 to 90°C and (C) freeze-drying the steamed vegetables at -50 to -80°C.
