PROBLEM TO BE SOLVED: To provide a food material utilizing functionality which cereal &beta-glucan has, and produceable at a low cost.SOLUTION: A saccharified cereal product contains 1-10 mass% of &beta-glucan which is obtained by using &beta-glucan-containing cereal, as the raw material, performing protein decomposing reaction before liquefying-saccharifying reaction, using protein splitting enzyme which has a &beta-glucanase activity of 0-10%, performing starch decomposing reaction by liquefying enzyme with a &beta-glucanase activity of 0-10% and saccharifying enzyme with a &beta-glucanase activity of 0-10%, and performing solid separation, spray-dry, or freeze-dry.
