The present invention relates to a food quick-freezing apparatus comprising a cylindrical drum with a pipe body structure which receives food, inserted therein, and quickly freezes the food. The cylindrical drum has an opening formed on an upper side, is formed in the shape of &primeU&prime, and has a product outlet formed on a lower portion. The food quick-freezing apparatus using a rotating screw having a scrapper comprises: a brine jacket which covers and encloses outer surfaces of left and right sides and an outer surface of a lower portion of the cylindrical drum, is tightly fixated, and allows a refrigerant at -40 to -50°C to flow therein a sealing cover which is seated on the opening of the cylindrical drum, closes the opening, and has a food inlet formed on one side and a transfer screw which is joined to the cylindrical drum by a shaft, is rotated around the shaft as the transfer screw is dynamically joined to a driving unit, and transfers the food, having been inserted therein through the food inlet, to a side of the product outlet.
