To provide a food having a non-conventional and new flavor, fragrance and texture by using a new lactic acid-producing bacterium, a method for producing the same, especially to obtain effects such as mildew resistance besides flavor, fragrance and etc., by using the new lactic acid-producing bacterium in bread (sour bread).
SOLUTION: The bread (sour bread) is baked by using a new lactic acid-producing bacterium obtained from an extraction process in a sugar production process. The bread has a non-conventional flavor and fragrance and exceedingly hardly grows molds.
